Fine Dining Kitchen Operations
Elevated kitchens still live or die on the same inspection day readiness — stations, allergens, certifications, and proof when asked.
- Station-ready checklists and logs before service
- Allergen and menu documentation your team can keep current
- Certification reminders for food handlers and managers
- Fix list from inspection findings so nothing sits unresolved
Why ambitious menus are harder to document
Menus change with the season, sometimes nightly. Every new dish brings new prep steps, new allergens, and new holding questions, and the brigade that knows them is spread across stations. The more ambitious the menu, the more there is to write down.
- Tasting menus and specials whose allergen notes have to stay accurate for the floor
- Raw and undercooked dishes that need a consumer advisory
- Oysters, sous vide, and house-cured items, each with its own records
- Station leads who rotate, and prep logs that change hands with them
Records a full-service kitchen should have ready
These are the items that separate a quick inspection from a long one in an elevated kitchen.
- Consumer advisory: CalCode calls for a disclosure and reminder when you serve raw or undercooked animal foods like crudo, tartare, or a rare burger
- Shellstock tags: kept for 90 days after the last shellfish from that container is served, in date order
- Reduced-oxygen packaging and sous vide: vacuum-packing programs generally need a HACCP plan approved by your local enforcement agency
- Cooling logs: stocks, braises, and sauces brought from 135°F to 70°F within 2 hours, then down to 41°F within the next 4
- RBS for the floor: servers and managers who pour wine or cocktails need Responsible Beverage Service certification within 60 days of hire
A Friday service, documented
Before family meal, each station lead runs their mise checklist: lowboy temps, labeled and dated containers, the cooling record for yesterday's veal stock. The chef updates allergen notes for tonight's crudo special so servers see the change before lineup. Shellfish tags get photographed into the record when the delivery is checked in. If a cooling reading misses its window, the Fix list shows what happened to the batch and who signed off.

Fine dining FAQ
Whenever you serve raw or undercooked animal foods, or dishes that contain them, CalCode calls for a disclosure identifying those items and a reminder about the higher risk of foodborne illness. An asterisk on the dish tied to a menu footnote is a common way to handle it.
If you vacuum-pack or otherwise use reduced-oxygen packaging, California generally requires a HACCP plan approved by your local enforcement agency, with narrow exceptions. Talk to county environmental health before you start the program, then keep the monitoring logs the plan calls for.
Keep shellstock tags for 90 days after the last shellfish from that container is sold or served, filed in chronological order. A photo of each tag stored alongside the original makes them easy to find when an inspector asks.
