TYPE 1: CRIMINAL INTENT Definition: Violent acts committed by a perpetrator who has no legitimate business relationship with the restaurant. Restaurant Examples: Armed robbery during late-night closing, burglary, till-snatching, uninvited trespassers in kitchen prep areas, mugging in the rear alley. 2. TYPE 2: CUSTOMER / PATRON / CLIENT Definition: Violence or aggressive acts committed by a customer, guest, or invitee during the course of business. Restaurant Examples: Intoxicated patrons assaulting bartenders upon refusal of alcohol service, verbal abuse/threats over meal checks or seating delays, physical altercations between dining parties. 3. TYPE 3: WORKER-ON-WORKER Definition: Violent threats or physical confrontations between current employees, past employees, or temporary stages/contractors. Restaurant Examples: Physical fights on the cooking line, brandishing cutlery or kitchen tools during disputes, retaliatory threats following disciplinary action. 4. TYPE 4: PERSONAL RELATIONSHIP Definition: Violence committed in the workplace by a perpetrator who has a personal relationship with an employee outside of work. Restaurant Examples: An abusive spouse, domestic partner, or former acquaintance confronting an employee on the dining floor, host stand, or employee parking lot. -------------------------------------------------------------------------------- SECTION 4: HAZARD IDENTIFICATION & PHYSICAL INSPECTIONS -------------------------------------------------------------------------------- 4.1 Quarterly Inspection Protocol: The Safety Administrator and designated team members will inspect the entire facility at least quarterly, upon initial opening, and immediately after any violent incident. 4.2 Physical Hazard Checklist: [ ] Visibility & Sightlines: Unobstructed visual paths between host stands, dining areas, bar wells, and kitchen entrances. [ ] Access Control: Exterior kitchen delivery doors, back alley exits, and staff storage areas remain locked to exterior entry 24/7. [ ] Cash Handling Controls: POS drawers capped at $[Insert Maximum Limit, e.g., $150]; cash drops made into secured drop safe; cash counting performed strictly behind locked office doors. [ ] Lighting & Illumination: Rear loading areas, dumpster enclosures, and staff parking walkways illuminated with functional commercial-grade lighting. [ ] Emergency Communication: Operational landlines, two-way radios, and easily accessible panic alarm buttons / emergency phone stations. -------------------------------------------------------------------------------- SECTION 5: NIGHT-SHIFT, CLOSING, AND LONE WORKER SAFETY PROTOCOLS -------------------------------------------------------------------------------- 5.1 Two-Person Closing & Opening Rule: Under no circumstances may an employee open, close, perform cash counts, or lock up the restaurant alone. A minimum of two staff members must remain on-site throughout the closing process until final building departure. 5.2 Back-Door & Trash Disposal Protocols: * Back kitchen and delivery doors must NEVER be propped open for ventilation or break access. * Trash runs to exterior dumpsters must be executed prior to dusk whenever possible. * Post-dusk trash runs require a mandatory two-person buddy system with exterior floodlights switched ON. * Re-entry through back doors must be verified via keycard, intercom, or supervisory chime. 5.3 Closing Staff Departure Escorts: Closing managers and crew members must leave the premises together in a group, walking through designated well-lit paths to vehicles or public transit stops. -------------------------------------------------------------------------------- SECTION 6: DE-ESCALATION, DISPUTE RESOLUTION & EMERGENCY RESPONSE -------------------------------------------------------------------------------- 6.1 De-Escalation Guidelines (Type 2 Incidents): 1. Maintain Safety Distance: Keep a minimum physical buffer of 6 feet from agitated individuals. Keep hands relaxed, open, and visible. 2. Tone & Vocabulary: Speak in a calm, neutral, and respectful tone. Avoid sarcasm, arguing, or matching hostile volume. 3. Supervisory Hand-off: Frontline servers/bartenders must immediately disengage and alert the Manager on Duty (MOD). 4. Guest Ejection Protocol: Refusal of service and guest ejections must be handled by two managers. Frontline crew must never physically touch or restrain a patron. 6.2 Armed Robbery & Imminent Threat (Type 1 Incidents): 1. Full Compliance: Comply calmly with the perpetrator's demands. Make no sudden movements. Do not attempt heroics or physical resistance. 2. Observation: Note physical characteristics (height, clothing, tattoos, weapons, direction of travel). 3. Incident Number, Date, Time, and Shift (Breakfast/Lunch/Dinner/Closing). 2. Specific Location (Dining Room, Bar, Kitchen, Restroom, Alley, Parking Lot). 3. Violence Classification (Type 1, 2, 3, or 4). 4. Detailed Factual Narrative of the Incident. 5. Classification of Perpetrator (Customer, Vendor, Coworker, Stranger, Acquaintance). 6. Circumstances & Weapons (Firearm, Knife, Blunt Object, Physical Blows, Verbal). 7. Consequences (First Aid, EMS Hospitalization, Property Loss). 8. Response (911 Dispatched, Police Report Number, Internal Disciplinary Action). 9. Name and Title of Investigating Supervisor. 7.4 Record Retention (5-Year Mandate): All Violent Incident Logs, quarterly hazard inspection records, and annual training rosters must be retained in the restaurant compliance records for a minimum of five (5) years. -------------------------------------------------------------------------------- SECTION 8: ANNUAL EMPLOYEE TRAINING CURRICULUM & VERIFICATION -------------------------------------------------------------------------------- 8.1 Mandatory Training Topics: All employees must receive interactive training upon hiring and annually thereafter, covering: 1.
