If age or authenticity is doubtful, refuse service and escalate to the Manager on Duty (MOD). 3.3 Fake / Altered ID Confiscation: Suspected fraudulent or altered IDs must be calmly retained when safe to do so, logged with date/time/description, and surrendered to local law enforcement within 24 hours. Never escalate physically over an ID dispute. -------------------------------------------------------------------------------- SECTION 4: INTOXICATION ASSESSMENT & CUT-OFF PROTOCOLS -------------------------------------------------------------------------------- 4.1 Observable Intoxication Indicators: Servers and bartenders must continuously assess guests for signs of intoxication, including (non-exhaustive): * Slurred speech, delayed responses, or repeated order confusion * Impaired balance, stumbling, or inability to remain seated safely * Aggressive, hostile, or inappropriate behavior toward staff or other guests * Rapid consumption combined with empty-stomach ordering patterns * Spilling drinks, glassy eyes, or falling asleep at the bar 4.2 Cut-Off Decision Authority: Any certified server or bartender may refuse further alcohol service. Once a guest is cut off, the decision is final for that visit unless a manager documents a clear reassessment after food, water, and time have been provided. 4.3 Refusal of Service Buffer (Calm Cut-Off Script): 1. Notify the guest calmly and privately that alcohol service is stopping. 2. Offer water and food; remove unfinished alcoholic beverages from the guest's reach when safe. 3. Immediately alert the Manager on Duty. 4. Document the refusal in the shift log (time, location, reason, staff involved — no guest medical speculation). 4.4 Two-Manager Ejection Rule: Ejecting an unruly, aggressive, or non-compliant patron requires two managers (or manager + designated security).
